Armonic Melody
Sangiovese, Cabernet Sauvignon and Merlot slowly age inside new barriques: this nectar may seem a provocation, considering the prevailing tendency toward pure Sangiovese and big barrels. It is not. This multivarietal approach is pure musical experimentation: seeking innovative melodies to play with different instruments the symphony of the soil and light of Lamole. Vineyards of provenance
Vineyards are located in Lmaole, in the commune of Greve in Chianti, at an altitude between 420m and 655m.
Terrain
Soil composed by schist and sandstone marl.
Breeding system
Guyot and spurred cordon. Plant density: 4.000 – 5.500 plants per hectares.
Grapes harvest period
Between late September and the second half of October, depending on cultivar and exposure.
Vinification
The grapes of the three varieties, harvested when perfectly ripe, are vinified with separate fermentation of the musts at controlled and variable temperature (from 24 to 28 ° C) and “personalized” maceration on the skins to enhance their specific aromatic and structural peculiarities. The maturation phase in barrique takes place separately for the first 6 months and then proceeds to the assembly and subsequent maturation of the blend for another 2 years in barrique. This is followed by bottling and aging for at least 8 months before being released onto the market.
Organoleptic form
An intense and deep ruby ??color preludes to the richness of the aromatic trajectory, which takes off with black aromas of berries, such as blackberry and blueberry, hovers centrally on woody hints of bramble and undergrowth and then planes long on voluptuous balsamic and spicy effluvium, with fresh mint and warm toasted notes. On the palate this aromatic complexity is anchored on tightly textured tannins, able to create a dense and at the same time silky texture, enveloping and nocturnal in the chromatic-gustatory impression, where salinity and acidity make the sip dynamic and the greedy aromatic persistence seals to taste again.
Gastronomic combinations
Although a wine with a superior structure, it demonstrates a particular combination versatility, clearly within the range of gastronomic proposals with a particular gustatory impact or elaborate preparation, therefore requiring dense sensations and, at the same time, agility in development. The kitchens of red meat, from the courtyard, mountain pasture or game, are the preferred playground, both when proposed in a “simple” version and in baroque preparations for cooking or juiciness. The wide territory of aged cheeses is also a place of exploration for this wine, which enjoys the forays in exotic preparations with an invigorating spicy expression.
