12-year-old Ridaldi terraced vineyard, located in Lamole, in the municipality of Greve in Chianti, at an altitude between 598 m a.s.l. and 655 m a.s.l.
Terrain
Soil composed of schist and galestro sandstones.
Breeding system
Spurred cordon and Chianti Arch. Plant density: 5.000 – 5.200 per hectares.
Grapes harvest period
25th September – 15th October.
Vinification
Fading of the bunches on mats from September to early January; pressing and immediate introduction into oak and chestnut barrels of 50 to 100 liters, where it ferments and ages for at least 3 years.
Organoleptic form
Baroque sweetness on firm architecture; a flood of aromas (candied orange, apricot and nectarine, wax, raw honey, tobacco, aromatic herbs) introduces a dreamy, sweet and enveloping flavor but ultimately balanced and classic, imbued with salinity at the epilogue.
Gastronomic combinations
It is more flexible than is usually thought; the sweet preparations are its streght (various biscuits, tarts, cheesecakes, chocolate or cream desserts), but it also enters into an emotional resonance with large blue cheeses, liver croutons, rabbit terrine or chestnut cake. Serve at a temperature of 10 ° -12 °.
